In some estates within the Cerrado region of Minas Gerais state in southeastern Brazil, ancient Bourbon and Yellow Catuai coffee varieties are cultivated. Although these estates originate from the same region, each coffee possesses its own distinctive characteristics. Despite this diversity in coffee profiles, Brazilian coffee suits popular tastes. As the largest coffee-producing region, it occupies a significant position in the global coffee trading market, with various grades and types of coffee accounting for one-third of global consumption. Although Brazil faces natural disasters several times more frequently than other regions, its sufficient cultivable area adequately compensates for this challenge.

The coffee varieties here are numerous, but Brazil's industrial policy emphasizes quantity and affordability, resulting in relatively few premium-grade coffees. However, they serve as excellent choices for blending with other coffee varieties.

Brazilian coffee features low acidity complemented by pleasant bitterness and sweetness, creating an exceptionally smooth mouthfeel with subtle grassy aromatics. Its fragrance carries slight bitterness, while its sweet, smooth character leaves a refreshing aftertaste. Brazilian coffee may not possess particularly outstanding merits, but it also lacks significant flaws. This flavor profile is mild and smooth, with low acidity, moderate body, and delicate sweetness—all these gentle flavors blend together, presenting the finest challenge to the palate in distinguishing each individual note.

Brazil HiU Micro Lot

The HiU initiative is a program to improve coffee quality in Central and South America, proposed by Mr. Graciano Cruz, a Panamanian expert renowned for his honey processing methods. The program focuses on applying natural or honey processing methods to micro lots, with only those achieving cupping scores above 85 qualifying for the HiU certification mark, creating a win-win situation for both estate owners and processors.
