The World's Coffee Estate - Finca El Injerto

There are over ten thousand coffee estates around the world, including estates that produce mass-market coffee beans, high-quality coffee bean estates, and estates that grow rare coffee varieties. Today, we'd like to introduce Finca El Injerto, a renowned top-tier coffee estate from Guatemala.

Estate Introduction

Finca El Injerto is located in the famous Huehuetenango highlands region of Guatemala. The Aguirre family has been cultivating coffee there since 1900. The estate's name "Injerto" comes from a local fruit name. Finca El Injerto places special emphasis on environmental protection and organic cultivation techniques, implementing strict quality control to ensure the quality of green coffee beans. Through the efforts of the Aguirre family, Finca El Injerto has earned Rainforest Alliance certification and has been a frequent champion in many international coffee competitions since 2002.

Finca El Injerto (also translated as Graft Estate) is a leading estate in Guatemala. If it claims to be second, no one would dare to claim first! It has won numerous world-class competition awards, leading to today's achievements. Last year, the estate owner further elevated their estate's status. Like Panama's famous Hacienda La Esmeralda, Finca El Injerto hosts global auction events. Of course, the auction batches they offer are exceptionally impressive. Notably, the first batch of "Mocha variety" in 2012 set a world record, fetching an astonishing price of "$500.5 per pound," making it a truly deserving star estate!

For this auction, Finca El Injerto specially launched the "BEST Injerto" series, featuring carefully selected small batches and coffee varieties of exceptional quality from within the estate. Experienced farmers hand-pick ripe coffee cherries, which are then screened by cuppers to eliminate batches that don't meet quality standards. Under such strict selection criteria, the Pacamara variety from Finca El Injerto accounts for only about 8% of total production.

About the Pacamara Variety

It gained worldwide fame through the Cup of Excellence (COE) in 2004, frequently winning championships within 2-3 years. The Pacamara produced by Guatemala's Finca El Injerto set a record price of $80.2 per pound for green beans in 2008.

The origin of the variety and its name: It is a derivative variety of Maragogype (Elephant Bean) and Pacas. The name "Pacamara" combines the first 4 letters of Maragogype and Pacas. It is an excellent coffee variety developed in El Salvador. The coffee beans are very large, similar to Elephant Beans, about 21-22 screen size. It has been an outstanding coffee variety in Central and South America in recent years. Every country or farm hopes to find suitable regions for cultivating this variety to produce excellent coffee, similar to how Panama cultivates Geisha. The characteristics of Pacamara coffee include bright fruit acidity and exceptionally pure and delicate sweetness.

Although Pacamara's appearance is still quite similar to its cousin - the Elephant Bean variety. Since 2006, COE has cupped Pacamara from 30 estates. Some flavors have truly been superstars, such as Honduras' 2006 champion Santa Martha, El Salvador's 2007 third-place Cerro Negro (Black Mountain Estate), Guatemala's regular COE champion El Injerto, and El Salvador's 2008 runner-up Pacamal Estate. These are all excellent representatives of Pacamara, but they are all award-winning batches, so prices are very expensive.

Pacamara offers full, rich, and complex flavors. Few coffee varieties have both fruit acidity while maintaining obvious sweetness, with diverse notes including stone fruits, vanilla plants, tropical fruits, chocolate, and sweet spices.
