Honey Processing Method

The key to the honey processing method lies in the amount of fruit pulp retained. The more pulp retained, the more pronounced the characteristics of honey-processed coffee become. However, this also increases the risk of over-fermentation. Various coffees labeled as "Honey coffee" will exhibit different processing characteristics depending on factors such as the local climate (sunshine/rainfall probability/air humidity) or the processor's preferences. Red honey processing removes approximately 25% of the pectin. Compared to yellow honey, the drying time is longer, and direct sun exposure is reduced, sometimes using shade nets for about 12 days.
