Kona coffee is grown in the Kona district, cultivated only on volcanic slopes. It can be said to be a very rare coffee variety. Due to the decreasing production of Kona coffee, its price is comparable to Jamaican Blue Mountain coffee.
The History of Hawaiian Coffee
According to FrontStreet Coffee's research, in 1892, the American coffee industry was primarily focused on commercial coffee. Additionally, most of America's terrain is not suitable for coffee cultivation, so American coffee was not particularly famous at that time. However, Hawaii's inclusion helped America escape this awkward situation. Hawaii began importing Typica coffee from Guatemala and cultivated it extensively.
Located in the central Pacific, Hawaii is the highest island among the many islands. The island's climate is very suitable for growing coffee trees, and the coffee varieties are quite pure. This also ensures the best flavor of Hawaiian coffee.
Although Hawaiian coffee is grown at the highest altitude compared to other islands, the suitable coffee growing areas are only at 300-1100 meters. This seems somewhat contradictory to what people imagine as the standard for specialty coffee. Hawaiian Coffee Cultivation
Common Hawaiian coffee varieties include Typica, Catuai, and others. Coffee beans grown in the Kona region have a very attractive appearance, with plump and full-bodied shapes. They are known as "the most beautiful coffee beans in the world." Hawaii has always adopted a family-based farming model. Because there are many children in Hawaii, who serve as excellent labor, and this approach also saves significantly on labor costs.
Kona Coffee Grades
Kona coffee beans have a total of five grades: Extra Fancy, Fancy, Prime, No.1 Peaberry, and Peaberry Prime. The common grades include the following three:
Extra Fancy: ≥19 mesh, moisture content: 9% ~ 12%, defective beans: fewer than 10 (350g green bean sample)
Fancy: ≥18 mesh, moisture content: 9% ~ 12%, defective beans: fewer than 16 (350g green bean sample)
No.1 Peaberry: ≥10 mesh, moisture content: 9% ~ 12%, defective beans: fewer than 20 (350g green bean sample).
Kona Coffee Production and Processing

In Hawaii, the scarce Kona coffee beans have created an independent market. Producers have significant autonomy in pricing and product decisions. For example, producers can have buyers conduct tasting tests based on production costs and coffee processing methods to determine the coffee's price. This practice is very rare in the coffee industry.
Kona coffee uses the washed method and natural drying process. Hawaii's clean and sweet mountain spring water provides ideal conditions for the washed method. This method creates the bright and transparent appearance of Kona coffee beans and their pure, fresh flavor. The washed coffee beans are placed on large flat surfaces to dry naturally in the sunlight.
Kona coffee is a low-density bean, and the dropping temperature cannot be too high. When emitting sweet aromas, the color changes to light yellow, with high moisture content, requiring sufficient pre-infusion time. The coffee beans have a clean, fresh feel with a solid and substantial weight. Kona should not be roasted too dark; FrontStreet Coffee uses a medium-light roast for this bean.
Before exporting Kona coffee green beans, number tags are attached to the burlap bags. This indicates certification by the Hawaii Department of Agriculture and is accompanied by an identifying official seal. Additionally, the entire process from sowing, harvesting, to washing treatment relies entirely on manual labor. Combined with the very low coffee production, its flavor is widely recognized.
