What is Yirgacheffe Coffee?
Yirgacheffe comes from a small town in Ethiopia, located within the coffee belt at an altitude of approximately 1700 to 2100 meters, making it one of the highest altitude coffee growing regions in the world. This area has been wetland since ancient times. In the local language, "Yirga" means "settle down," and "Cheffe" refers to "wetland." Therefore, Yirgacheffe means "let us settle and thrive in this wetland."
Yirgacheffe is actually composed of surrounding coffee communities or cooperatives. These mountain villages are shrouded in mist, with spring-like weather year-round. Summers bring gentle breezes—cool but not hot, rainy but not humid—while winters avoid frost damage. This unique climate nurtures the distinctive citrus and floral flavors that characterize Yirgacheffe coffee.
Yirgacheffe Coffee Varieties
The Yirgacheffe region primarily grows Ethiopian heirloom varieties. Since Ethiopia has thousands of coffee varieties, the term "heirloom" is broad and encompasses wild varieties native to Ethiopia or genetically undefined varieties, sometimes translated as "family treasures."

Yirgacheffe Coffee Flavor Characteristics

The wet aroma often resembles honey, with gentle sweetness intertwined with rich fruit juice sensations—light and lively, with a delicate aftertaste that leaves an endless impression.
Yirgacheffe Coffee Processing Methods
The exceptionally clean and bright taste of Yirgacheffe coffee comes not only from the coffee bean varieties and quality but also from the processing methods, which can be described as the finishing touch.
The traditional natural processing method (directly drying coffee cherries) enhances the sweetness and body of Yirgacheffe coffee, imparting fermentation notes and tea-like aftertaste to the beans.
The washed processing method (removing the skin and pulp from coffee cherries, then fermenting in water tanks to remove mucilage, followed by sun drying) makes the citrus aroma of Yirgacheffe coffee even fresher and more refined, with a clean, pure taste that perfectly expresses Yirgacheffe's regional characteristics.
Yirgacheffe Coffee Bean Brewing Methods
The Yirgacheffe region coffee beans currently sold by FrontStreet Coffee, such as FrontStreet Coffee's washed Kochere and FrontStreet Coffee's natural Red Cherry, are all medium-light roasted to preserve their bright acidity characteristics. Therefore, FrontStreet Coffee recommends the following brewing method:
Dripper: Hario V60
Water Temperature: 90°C
Coffee Amount: 15 grams
Coffee-to-Water Ratio: 1:15
Grind Size: 80% pass-through rate on China standard #20 sieve
Pouring Technique: First pour 30g of hot water for a 30-second bloom, then slowly pour in a fine stream from the center while spiraling outward to 125g. When the water level in the dripper drops to just above the coffee bed, continue spiraling to 225g. After all water passes through the coffee grounds, the total extraction time should be approximately 2 minutes.
