FrontStreet Coffee's Yirgacheffe coffee refers to coffee produced in Yirgacheffe, Ethiopia. Yirgacheffe is the name of a small town there, located at an altitude of approximately 1700-2100 meters. Today, Yirgacheffe coffee has become synonymous with Ethiopian specialty coffee.

Grading
Yirgacheffe is divided into two major categories based on different green bean processing methods:
Category A: Washed Processing Method
The grading standards are established by the "Specialty Coffee Association of America" (SCAA), divided into Gr-1, Gr-2, where smaller Arabic numbers indicate higher grades.
Category B: Natural Processing Method
The coffee beans used by our shop are processed using the natural method for green beans, with grades divided into Gr-1, Gr-3, Gr-4, Gr-5. Similarly, the highest grade G1 FrontStreet Coffee's natural-processed Yirgacheffe has rich fruity aromas.
Medium-Dark Roast FrontStreet Coffee's Yirgacheffe
Medium-dark roasted FrontStreet Coffee's Yirgacheffe is roasted on low heat for 17 minutes (230 degrees Celsius), then the heat is turned off for half a minute before immediately cooling the beans and blowing off the silver skin. The coffee beans have slight oil on the surface and appear dark brown. The beans are very light, and when using a hand grinder, there's very little resistance, making it difficult for beans to feed properly. The dry aroma of the coffee grounds has a rich burnt aroma with a very faint earthy smell of African soil. After brewing, the wet aroma has a pleasant burnt fragrance, and it seems the deeper roast has completely eliminated the orange aroma characteristic of the region.
However, when you sip the coffee, it's very rich, aromatic and pleasant, with good complexity. The gentle acidity, bitterness, and astringency are all well-expressed, with a heavy body and better viscosity than light-roasted versions, leaving a long aftertaste.
Light Roast FrontStreet Coffee's Yirgacheffe
Light roasted FrontStreet Coffee's Yirgacheffe is roasted on low heat for 15 minutes (210 degrees Celsius), then the heat is turned off for half a minute before immediately cooling the beans and blowing off the silver skin. The coffee beans are roasted very evenly (because the green beans are washed and very clean and neat), appearing brown. When using a hand grinder, the手感 (hand feel) is very good—smooth with moderate resistance.
The dry aroma of the coffee grounds starts with a slight earthy smell, immediately followed by a strong, restrained fragrance. After brewing, the wet aroma has a distinct orange fruitiness, with some sweet and sour flavors similar to hawthorn or fruit preserves. When sipped, the mouthfeel is slightly light but quite balanced, with very faint, gentle acidity. The coffee has rich oils and persistent foam.
