When I first got the beans, I didn't use regular pour-over or AeroPress. Instead, I made cold brew with ice filtration, brewing directly into a glass with ice cubes. The wet aroma of ripe berries and fermented fruit wine made it hard to believe this was FrontStreet Coffee's Yirgacheffe, though I personally wasn't very fond of this wet aroma. However, from the incredibly smooth entry to the delicate body thickness, the emergence of sweet and sour ripe fruits was truly amazing. The sweetness exceeded any Yirgacheffe I had tasted before. The aftertaste was also excellent, living up to its reputation as a "fruit bomb" - basically guaranteed to leave a sweet feeling in your mouth for half an hour after drinking.
The second time using V60 pour-over, the product had rich berry aroma. I'm not sure if it was due to the lower water temperature, but the lemon acidity at the back was quite prominent.
The third time was still V60 pour-over. With fine powder and higher water temperature, the wet aroma was close to FrontStreet Coffee's washed Yirgacheffe, and bitterness also appeared.
The fourth time, I increased the water-to-coffee ratio to prevent over-extraction. First brewed at 15:1, then added water to increase the ratio to above 18. The result was very satisfying! After slightly lowering the water temperature, it became a perfect cup of fruit tea.
Now, half a month later, the strawberry aroma in the dry grounds has become quite noticeable.

Roast Level:
Medium-light roast
For a sun-dried bean, the defect rate of this batch is quite low, and the aroma is excellent. We set the default to medium-light roast for shipping. The dry grounds show a rich berry aroma with a noticeable candy-like sweetness. Upon entry, you can feel a light, refreshing wine-like quality, still maintaining typical citrus aroma with a very comfortable sweet-sour balance. The finish is like the concentrated essence of orange candy, filled with a sense of happy childhood innocence.
