The "Secret" to Why Blue Mountain Coffee Tastes So Pure
All their coffee trees grow on rugged mountain slopes, making the harvesting process extremely difficult. Only local skilled female workers can handle this task. It is crucial to select coffee beans that are perfectly ripe during harvesting—under-ripe or overripe beans will affect the coffee's quality. The harvested coffee beans must be hulled on the same day, then fermented for 12-18 hours. Afterward, the coffee beans undergo washing and sorting. The next step is drying, which must be conducted on concrete floors or thick blankets until the coffee beans' moisture content drops to 12%-14%. They are then stored in special warehouses. When needed, they are taken out for roasting and then ground into powder. These procedures must be strictly controlled; otherwise, the coffee's quality will be affected.
In 1717, French King Louis XV ordered coffee cultivation in Jamaica. Twenty years later, to supplement the labor force, Spain began trafficking slaves from Africa to Jamaica starting in 1517, leading to the gradual emergence of Black people as Jamaica's main ethnic group. In 1538, the Spanish established Spanish Town as Jamaica's capital.
From the late 16th century onward, Jamaica suffered multiple pirate attacks from countries such as France, England, and the Netherlands. In May 1655, a British fleet jointly commanded by William Penn and Robert Venables occupied Jamaica. They immediately invited pirates to the island's Port Royal to assist in defending against possible Spanish counterattacks. Between 1657 and 1658, the Spanish launched counterattacks from Cuba, all ending in failure.
