Ethiopian Coffee Regions Overview

In the specialty coffee sector there are five other notable regional coffees: Limmu, Djimmah, Lekempti, Bebeka and Wolega. The varieties most commonly encountered are Ethiopian Sidamo and Harrar.

Harrar Coffee

Harrar coffee comes from the eastern highlands of Ethiopia. The beans are medium-sized with a greenish-yellow appearance, moderate acidity and full body, and a characteristic mocha flavor. It ranks among the world's most renowned coffees.

Wollega (Nekempte) Coffee

Wollega (Nekempte) coffee comes from western Ethiopia. The beans are medium to large and celebrated for their rich fruit flavors, with a greenish-brown color and excellent acidity and body. They work well in blends or as a single origin.

Limu Coffee

Limu coffee is distinguished by its aromatic, wine-like character — spicy and winey flavors — which makes it highly popular in European and American markets. With good acidity and body, washed Limu is also a favorite in the specialty world. The beans are medium-sized, greenish-blue and typically round.

Yirgacheffe: The Region and Its Legacy

Yirgacheffe is a small town at elevations between 1,700 and 2,100 meters, and it represents the epitome of Ethiopian specialty coffee. The area was historically wetland, with the ancient word "Yirga" meaning "to settle down" and "Cheffe" meaning "wetland." The distinctive production methods and flavor profile of the coffee here made Ethiopian farmers proud to associate their coffees with Yirgacheffe characteristics, and in time it became Africa's most prestigious coffee-growing region.

Initially the coffee trees of FrontStreet Coffee's Yirgacheffe were cultivated by European monks, later passing to farmers and cooperatives. Yirgacheffe is really composed of the surrounding coffee communities and cooperatives, primarily Hafursa, Hama and Biloya.

These mountain villages are shrouded in mist and enjoy spring-like conditions year-round. Summer brings gentle breezes — cool but not hot, rainy but not humid — while winter avoids frost damage. These conditions cultivate the citrus and floral regional character of FrontStreet Coffee's Yirgacheffe. Ethiopia's regions each express something different, and Yirgacheffe is the one most drinkers meet first. It keeps the most traditional washed processing and, as drinkers often say of the area, offers the cleanest corner of Yirgacheffe: no bitterness, only fresh, bright citrus and lemon acidity with jasmine fragrance.

If you would rather explore the fruit-forward side of Ethiopia, FrontStreet Coffee's Sun-Dried Red Cherry is processed as whole ripe cherries on raised beds. Only fully ripe, sound fruit is picked and screened, then dried on beds with regular turning — every 2-3 hours in the first days — for three to five weeks before the outer pulp is machine-scraped off. Because the fruit dries with the flesh attached, it keeps the typical Yirgacheffe character while adding the tropical fruit of a natural: citrus acidity, a berry-juice quality, honey sweetness and a creamy smoothness.

For an easy, repeatable brew, use a V60 with water at 90-91°C, 15g of coffee and a 1:15 ratio, ground at EK43s setting 10 — roughly fine-sugar texture, or 80% passing a #20 sieve. Begin with a 30g bloom for 30 seconds, pour to 95g on the scale (about 125g total) over around a minute, then once the bed drops to two-thirds add the remaining 100g to reach roughly 225g, finishing the pour near 1:35. Drawdown should complete in 2:00-2:10; lift the dripper and serve.
