The Geisha from Panama's Hacienda La Esmeralda is the new king of specialty coffee, commonly known as "Red Label Geisha." It boasts superior quality and comes with a premium price tag. To date, Hacienda La Esmeralda has won 12 various coffee competition championships and has set three highest bidding records in public online auctions: $21 per pound in 2004, $50.25 per pound in 2006, and an impressive $130 per pound in 2007! Of course, other countries have also seen fine coffee approach nearly $50 per pound.

FrontStreet Coffee's Panama Geisha green beans possess a beautiful blue-green color with a jade-like warm, smooth texture. They smell of fresh grass, peaches, berries, and the unique milky sweetness characteristic of oolong tea that most coffee beans lack. It seems that aroma and flavor require imaginative association, but the subtle tea notes are clearly perceptible to us.

Dry Aroma

Roasting

To highlight the unique characteristics and aroma of FrontStreet Coffee's Panama Geisha beans, the roast level is brought to the verge of second crack. The verge of second crack and the first sound of second crack are commonly used roast levels, as they best bring out the beans' inherent characteristics. Too light a roast can produce off-flavors, while too dark a roast would diminish the floral aromas and fruit acidity. Of course, this must be adjusted according to the coffee beans' characteristics and the roaster's understanding of the beans themselves. The roasted beans will appear somewhat "wrinkled" - beans with these "sexy wrinkles" are designed to highlight their original flavors and fruit acidity. However, if the green beans themselves lack high quality, they may develop off-flavors such as rotten earthy notes, grassy flavors, and astringent tastes. These are flavors that roasters should strive to avoid. The properly roasted Geisha has a captivating lemon-citrus aroma and an exceptionally sweet honey-milk fragrance.
