It involves using a depulping machine to separate most of the pulp from the coffee beans in harvested berries, then guiding the parchment beans to a clean water tank for soaking and fermentation to thoroughly remove residual pulp layers. Through water processing, unripe and defective beans are selected out due to buoyancy, then depulping (also called pulping) is performed - removing the fruit skin from coffee cherries through machines, leaving coffee with mucilage for fermentation in tanks for 1-2 days to decompose the mucilage attached to the coffee beans.
