For pour-over, FrontStreet Coffee recommends Kono, which builds body and suits Blue Mountain's mellow style: 15g of beans rested 4-7 days from the roast date, ground a little coarser than light-roast beans to roughly white-sugar size, with 87-88°C water and a 1:15 ratio. Bloom with 30g of water for 30 seconds, pour to 120g, then finish at 225g, keeping the stream vertical and circling slowly, and speeding up a little on the last stage so the bed does not clog and over-extract. Blue Mountain also works well in a moka pot or an espresso machine — a moka pot with a slightly finer grind, hot water in the base and medium-low heat, off the flame as the coffee finishes flowing, will push the chocolate, caramel and nut notes forward for a fuller, richer drink.
