Characteristics of Blue Mountain Coffee Beans

Upon receiving the green Blue Mountain No. 1 coffee beans, their blue-green color resembles precious gems. Due to the washed processing method, the fermentation step during processing enhances the mature and delicate acidity of Blue Mountain coffee beans, emitting aromas reminiscent of fresh grass and lemon.

The coffee beans are uniformly plump and full, benefiting from the strict screening standards for Blue Mountain No. 1 grade. Only coffee beans measuring 17-18 mesh, with an overall defect rate of less than 3%, and possessing full, plump kernels can be classified as Blue Mountain No. 1 grade. The uniform size of the beans further ensures even heating during roasting, resulting in a cleaner coffee taste.

Roasting Process

According to FrontStreet Coffee's observations, the moisture content of Clifton Blue Mountain No. 1 coffee beans is around 13%, with medium bean density, making them suitable for gradual roasting methods. Therefore, FrontStreet Coffee employs a roasting approach of 4 minutes after the first crack, emerging at 201°C to achieve a medium-dark roast level. This enhances the coffee's richness while preserving appropriate acidity to increase the coffee's complexity.

Brewing Recommendations

To extract the layered complexity of Blue Mountain Coffee, the first step is selecting freshly roasted coffee beans. FrontStreet Coffee ships all coffee beans within 5 days of roasting in their whole bean form, ensuring customers can experience the most complete flavors and aromas.

After roasting, coffee beans contain large amounts of carbon dioxide, which gradually begins to release. During the first five days, carbon dioxide carries away the smoky notes left from roasting, after which it slowly begins to diminish the flavors and aromas. Therefore, the optimal tasting period for freshly roasted coffee beans is between 5-30 days.

For grinding Blue Mountain No. 1 coffee, FrontStreet Coffee recommends using a medium-coarse grind—approximately the size of raw sugar. The grind standard is 70% pass-through on a Chinese No. 20 standard sieve. The recommended brewing water temperature is 88-89°C.

To achieve a fuller yet complex texture in Blue Mountain Coffee, FrontStreet Coffee recommends using a Kono filter cup for brewing. This filter's characteristic feature is the close fit between filter paper and filter cup, which facilitates immersion extraction during pour-over brewing, enhancing the overall richness of the coffee.

FrontStreet Coffee's in-store brewing parameters: 89°C, 15g coffee grounds, 1:15 coffee-to-water ratio, medium-coarse grind (70% pass-through on No. 20 sieve).

The pouring technique is as follows: First, use twice the amount of water as the coffee grounds for blooming—that is, 30g of water for 30 seconds. The blooming process is necessary to allow the coffee grounds to release internal carbon dioxide, ensuring more stable extraction in the later stages. Use a small stream to pour in circles until reaching 125g, then continue pouring to 225g and stop. Remove the filter cup once all water has dripped through. Time from the beginning of pouring: 2 minutes 10 seconds. Finally, pick up the entire carafe, shake gently to mix, and pour into cups for tasting.
