Traditionally, Ethiopian Yirgacheffe coffee beans were processed using natural methods, with the entire process being quite crude, resulting in many defective beans, inconsistent quality, and difficult to control. However, after learning and introducing the washed processing and drying techniques from Central and South America, the quality of green beans has significantly improved, making Ethiopian washed Yirgacheffe beans not only clean in appearance but also possessing intense floral aromas and unique citrus flavors.
Most of Ethiopia's coffee production is exported to developed countries. Unlike other coffee-producing countries, 50% of the coffee produced in Ethiopia is consumed domestically. Among them, the Kochere micro-region, located 25 kilometers southeast of Yirgacheffe, produces coffee with richer lemon aromas and fruit-like sweet and sour notes compared to other regions, with a smooth mouthfeel, making it a perfect example that typifies the characteristic features of Yirgacheffe coffee.
