Ethiopia is one of the countries with the longest coffee history in the world, and the coffee beans from the Yirgacheffe region are renowned, making them a favorite among many coffee enthusiasts. Traditionally, Ethiopian Yirgacheffe coffee beans were processed using natural methods, with the entire process being quite crude, resulting in many defective beans, inconsistent quality, and difficult to control. However, after learning and introducing the washed processing and drying techniques from Central and South America, the quality of green beans has significantly improved, making Ethiopian washed Yirgacheffe beans not only clean in appearance but also possessing intense floral aromas and unique citrus flavors.

Most of Ethiopia's coffee production is exported to developed countries. Unlike other coffee-producing countries, 50% of the coffee produced in Ethiopia is consumed domestically. Despite this, over 60% of Ethiopia's foreign currency export earnings still come from coffee trade, a figure that represents Ethiopia's economic situation. Ethiopian Yirgacheffe coffee beans carry floral aromas and distinctive fruit flavors, making Yirgacheffe coffee one of the most famous premium green beans in the world.

Among them, the Kochere micro-region, located 25 kilometers southeast of Yirgacheffe, produces coffee with richer lemon aromas and fruit-like sweet and sour notes compared to other regions, with a smooth mouthfeel, making it a perfect example that typifies the characteristic features of Yirgacheffe coffee.
