To achieve a cup of coffee that can express pure, balanced, and clear flavor layers, FrontStreet Coffee recommends using pour-over brewing methods. Pour-over is a drip coffee extraction method that requires a dripper as a stand and filter paper as filtration. The rib design of the dripper can guide water flow to pass evenly and at a constant speed through coffee particles, extracting soluble substances.
Different roasting levels of coffee beans will have different extraction speeds, therefore requiring different grind sizes and water temperatures for extraction. According to FrontStreet Coffee's roasting and brewing experience analysis, light-medium to medium roast coffee beans are suitable for medium-fine to medium grind/fine sugar-like size (75-80% retention through China No. 20 standard sieve), paired with 90-91°C water temperature for brewing. Medium-dark to dark roast coffee beans are suitable for medium-coarse grind/coarse sugar-like size (65-70% retention through China No. 20 standard sieve), paired with 88-89°C water temperature for brewing.
For daily hand-dripped coffee production at FrontStreet Coffee, regardless of roast level, after obtaining the appropriate grind, 15g of coffee powder is used for extraction with a 1:15 coffee-to-water ratio (i.e., 15g powder with 225g hot water injected for coffee extraction). Coffee extracted with this amount and ratio is more likely to achieve a balanced taste.
Brewing method is as follows: First, inject 30g of water for 30 seconds of blooming, then inject 95g (electronic scale shows around 125g), taking about 1 minute to complete. When the water level drops to 2/3 of the powder layer, inject the remaining 100g (electronic scale shows around 225g), taking about 1'35"-1'40" to complete. Then finish dripping within 2'00"-2'10". Remove the dripper to complete extraction.
