Last month, FrontStreet Coffee introduced a cone-shaped Ice Pupil dripper that appeals to those who appreciate aesthetics, featuring a groove design that allows filter paper to fit perfectly, creating coffee with a rich and mellow mouthfeel. Today, let's get acquainted with its "distant relative" – the Ice Pupil B75 dripper.

The Ice Pupil B75 dripper is a filter designed by competitor Li Jinlong to express the "sweet and clean" characteristics of coffee while achieving stable extraction through simpler methods. Co-designed with TIMEMORE and launched in 2022, it gets its name "B75" because "B" stands for "Basket" (the English term for flat-bottom drippers) and "75" represents the 75° tilt angle.

FrontStreet Coffee's version of the Ice Pupil B75 is made of lightweight resin material, featuring a clean and transparent design with equally impressive aesthetics.

Unlike other flat-bottom drippers, the Ice Pupil B75 features an extra-large drainage hole with a diameter of 5cm at the bottom. It has ten staggered ribs to support the filter paper, preventing slippage during pouring. Apart from these supporting ribs, the rest of the bottom is completely hollow, allowing coffee to flow down more quickly.

The dripper walls feature a 0.5cm thick design that provides better heat retention for the coffee bed and enables more efficient extraction. The angle between the cup edge and bottom forms a 75° angle, more vertical than typical drippers, creating a coffee powder layer that more closely resembles a "cylindrical" shape.

Additionally, the dripper edge features 20 vertical internal flow channels that shorten the water flow path and ensure smoother drainage. When used with basket-shaped filter papers, the thick coffee cake allows each particle to more evenly receive the "baptism" of hot water, thereby improving overall extraction uniformity.

Comparative Extraction Analysis

To understand the extraction performance of the Ice Pupil B75 dripper and how it differs from the cone-shaped Ice Pupil dripper, FrontStreet Coffee used Ethiopia's 74158 Santa Weni as the brewing subject, extracting with identical parameters using both the Ice Pupil B75 and cone-shaped Ice Pupil drippers, then comparing their flavor characteristics.

Brewing Parameters:
Coffee beans: 15g
Water ratio: 1:15
Water temperature: 92°C
Grind size: EK43s setting 9.5 (82% passing through #20 standard sieve)
Three-stage pour: 30g bloom for 30 seconds, second stage pours 85g water from inside to outside in circles, wait until liquid level drops to 1/3 of the coffee bed (approximately 1:05-1:10), then pour the remaining 110g of water.

Cone-shaped Ice Pupil Dripper: Coffee flow rate is faster in the early to middle stages, slowing down in the later stages, with a total drip time of 2 minutes 15 seconds. The coffee primarily features tropical fruit, raspberry, and light floral flavors, with bright lemon acidity when cooled, light texture, and full fruit acidity. When completely cooled, the coffee exhibits more tea-like notes, with moderate aroma and slightly cloudy mouthfeel.

Ice Pupil B75 Dripper: Coffee flow rate remains smooth and stable throughout, completing at 2 minutes 9 seconds. The coffee enters with notes of dried mango, strawberry, and black tea, with prominent sweetness. As the temperature slightly decreases, noticeable orange-like juice sensation emerges with a relatively short finish. Even when completely cooled, the fruit flavors remain prominent with almost no bitterness, creating a very pleasant palate experience.

Compared to cone-shaped drippers, the B75's extra-large hole allows for faster flow, preventing over-extraction. This permits using finer grinds to increase overall extraction rate, releasing more premium flavors from the coffee. Based on the brewing comparison above, FrontStreet Coffee believes that high-sweetness beans paired with the Ice Pupil B75 dripper can fully maximize their advantages.

Beginner-Friendly Design

Additionally, during brewing experiments, FrontStreet Coffee found that the B75's flat-bottom design and 75° angle create a thinner coffee bed in a trapezoidal shape—slightly wider at the top and narrower at the bottom. The water level remains horizontal throughout,不易 affected by pouring technique. This means that even if water flow isn't perfectly controlled, all water will eventually participate in the coffee extraction. This characteristic is very friendly for beginners who haven't yet mastered flow control, making it more intuitive to use.

Cold Brew Testing

Finally, FrontStreet Coffee wanted to try cold brewing with the B75 dripper. Considering that this dripper was designed by Li Jinlong to better express the cleanliness and sweetness of coffee, we selected another washed coffee bean: Jiaming Green Label Geisha.

Water ratio: 1:15
Water temperature: 92°C
Grind size: EK43s setting 9 (85% passing through #20 standard sieve)
Three-stage pour: 30g, 70g, 50g

The washed Green Label Geisha cold brew extracted with the Ice Pupil B75 dripper initially presents honey, cream, and honey orange aromas. The mouthfeel resembles chilled pomelo green tea—while not as layered as hot pour-over, the juice sensation is remarkably balanced, leaving you wanting more after each sip.
