Those who frequently drink coffee have likely heard the term "90+ coffee beans" from coffee shops or baristas. So what exactly are 90+ coffee beans?

"90+" doesn't refer to all coffees scored above 90 points; it refers to a premium coffee series consisting of 13 flavor profiles. The coffee beans in this series come from different estates and feature distinct flavor characteristics. During processing, these coffee beans are individually distinguished by variety, climate, harvest timing, and freshness. After tasting, corresponding processing methods are researched to achieve optimal taste and present them in their most perfect form.

The Company Behind 90+

On the other hand, 90+ is also a company—Ninety Plus, founded by Joseph Brodsky in 2006. In just a few years, it made the brand known to coffee professionals worldwide. In 2006, Joseph Brodsky decided to dedicate himself to changing the deeply entrenched commercial coffee cultivation model.

The Origin Story

In 2004, Hacienda La Esmeralda used the Geisha variety to participate in the BOP competition and auction. The exceptionally high scores brought this bean to fame. It sparked a Geisha wave around the world, and many people were attracted to Geisha, with Joseph Brodsky being one of them. Joseph Brodsky went to Panama to search for it but failed. However, he thought that Ethiopia still had many undiscovered varieties, and there must be bean varieties that could rival Geisha. Moreover, Geisha was also introduced from Ethiopia, so he went to Ethiopia in 2005. In 2006, he founded the Ninety Plus trading company, but at the beginning, it didn't have the capacity to engage in coffee cultivation, so Joseph decided to start with processing methods.

Revolutionary Processing Approach

Other green bean merchants typically first search for beans, conduct cupping, and finally purchase the beans that cup well. But 90+ is different—the company possesses technology to control flavor expression. Therefore, they adopt a cooperative model with local estates, completely controlling processes from cultivation, sampling, harvesting, processing, and cupping. This ensures that every coffee bean they produce has unique and stable flavor and quality. Under these circumstances, Aricha and Beloya were introduced, surprising the coffee circle with their rich fruit flavors and high quality, and 90+ became famous as a result.

Quality Control and Expansion

Afterward, they began to identify potential coffee farmers, providing ideal flavor feedback to farmers and processing plants based on exported coffee beans, and conducted process reengineering, correcting to the "90+" set flavor profile through scientific management methods. They then selected the most compliant ones for production. From this, it's evident that the quality of 90+ company's beans has always maintained an average standard, which is also the core value of 90+ company.

Estate Development

Although Joseph couldn't find a variety surpassing Geisha in Ethiopia, he intended to create premium Geisha through technology. So in 2009, Joseph established the "90+ Geisha Estate" (Ninety Plus Gesha Estate) in the Volcán region of Panama, mainly cultivating Geisha varieties and Ethiopian native varieties. Coffee beans were officially produced in 2014. Currently, the estate also houses the Ninety Plus Sensory Room (NP Sensory Laboratory) and Solar Kiln Laboratory, used for experimenting with various green bean processing methods different from conventional ones.

In 2019, they acquired "Barú Estates" (Ninety Plus Barú Estates) located on the western side of Barú Volcano in Panama. The volcanic soil and high altitude of Barú Volcano are better suited for coffee cultivation.
