Recently, FrontStreet Coffee was surfing the web and kept coming across various versions of hot mocha tutorials. Learning about the multiple ways to combine chocolate with milk coffee, I was tempted by cup after cup of visibly sweet, fragrant, and rich chocolate coffee warm drinks. Why wait for the perfect day? Today, let's take out the small sweet treats we have at home and recreate that cup of hot mocha that delights all senses.

The Perfect Chocolate Base

To create a hot mocha with a rich texture and full cocoa aroma, we need to focus not only on the ingredients that provide the chocolate flavor, but also on choosing the right espresso beans to pair with them. How to make these three elements blend perfectly with milk is also crucial.

On the market, there are many cocoa-based products that can provide chocolate flavor for coffee, such as chocolate sauce, unsweetened pure cocoa powder, pure dark chocolate blocks, milk chocolate blocks, cocoa butter chocolate shavings, and more. Prices range from a few yuan to over a hundred yuan, with each having different chocolate flavors, solubility, and textures. You can choose according to your budget and preferences.

Among these, chocolate sauce is widely used in café operations due to its inherent sweetness, high cost-effectiveness, and long shelf life. It can not only add chocolate aroma to espresso but also serve as an auxiliary "tool" for latte art. However, because this type of chocolate sauce has a relatively thick texture, it tends to harden in low-temperature environments and doesn't blend completely into Espresso and milk foam after stirring. The resulting hot mocha sometimes has a slight grainy texture.

If you use unsweetened pure cocoa powder or dark chocolate blocks, you'll need to add sugar according to your taste when making espresso mocha. Additionally, the powder needs to be pre-mixed with hot water and stirred evenly before it can be combined with Espresso. Here FrontStreet Coffee chooses milk chocolate blocks, with the melting method being: placing the package on the coffee machine to heat until it becomes a fluid consistency for later use.

Choosing the Right Espresso Beans

As for the choice of espresso beans, it's recommended to use medium-dark roast types with distinct nutty flavors. Taking FrontStreet Coffee's bean list as an example, besides single-origin Brazil Queen Manor, Indonesia Gold Mandheling, and Papua New Guinea Bird of Paradise, some espresso blends featuring nutty, caramel, dark chocolate, and creamy flavors also pair wonderfully with milk chocolate, elevating the hot moca's taste to another level.

The Art of Fusion

Once the milk foam, chocolate, and espresso extraction are all prepared, the next step is to thoroughly blend these three elements. FrontStreet Coffee once tried directly combining melted chocolate with fresh milk and frothing them together in the milk pitcher, but discovered that during the frothing stage, the thick chocolate obstructs the steam holes from evenly cutting and enveloping the large air bubbles, ultimately failing to form a stable milk foam layer that began to collapse after dozens of seconds.

Therefore, we switched to adding chocolate syrup to the espresso, stirring it evenly with a spoon before combining it with the frothed milk. Here, FrontStreet Coffee's recreated hot mocha version doesn't require latte art, so the milk foam can be made thicker, about 1.2cm, somewhere between a latte and a cappuccino.

Ingredients and Preparation

Ingredients: Double shot Espresso, 200g chilled fresh milk, 20g pre-melted chocolate blocks, a pinch of chocolate shavings/cocoa powder, and a 200-300ml coffee cup. If you're also a dessert enthusiast, you can add marshmallows or cream like FrontStreet Coffee.

  1. First, pour the melted chocolate syrup into a ceramic cup. Use 20g of warm coffee powder to extract 37g of espresso liquid, and stir evenly while hot;
  2. Froth 200g of fresh milk to about 50-55°C hot milk foam, with 4-5 hissing sounds before entering the microfoam stage;

  1. Use a spoon to scoop out a spoonful of the upper milk foam and draw circles in the chocolate-mixed espresso, creating a white solid circle as shown in the image;

  1. Pour all the remaining hot milk foam from the milk pitcher into the coffee cup from the center until it's full;

  1. Finally, enter the decoration stage: gently place 2 plump white marshmallows on top, sprinkle with cocoa powder or chocolate shavings, then use a torch to lightly toast them to a golden brown color. One after another, warm and comforting hot mochas are now complete.
