What is the 'CCD' Project in Panama Coffee?
Have you ever noticed that the term "CCD" occasionally appears on the bean bag labels of some Panama coffees? Yet it's not the name of any estate, any origin, or any bean. So what do these three letters CCD represent?
Panama's CCD Project
The CCD project was established in 2018, with its full name being "Creative Coffee District," which means an innovative processing zone focusing on specialty coffee. The main purpose of this project is to modernize traditional coffee processing techniques, enabling the produced coffee flavors to have more unique tastes! This project attracts coffee estate owners from around the world who are interested in novel processing methods. They can all come to Panama to participate, conduct research, and find local coffee estates for cooperation.
Therefore, to advance this project, they introduced advanced coffee processing equipment and technology, transforming traditional washed and natural processing methods. Additionally, they impart coffee cultivation experience to local small-scale farmers to ensure they can produce higher quality fruits and thus obtain higher income. Then, the launch of this project attracted the participation of the renowned La Palma & El Tucan estate from Colombia!
La Palma & El Tucan Estate
La Palma & El Tucan was established in 2011 in the Eastern Andes region of Colombia. Its founders are quite diverse, including farmers, businessmen, scientists, and artists.
Most coffee estates are family businesses, seamlessly passed down from one generation to the next. La Palma & El Tucan estate is somewhat different—it's the ideal coffee growing environment that the founders found after extensive exploration. Elements like high altitude, volcanic soil, sunlight, and humidity, which we mentioned in yesterday's article, are all in their most suitable state for coffee cultivation within the La Palma & El Tucan estate area. Moreover, since its establishment, the estate has not only helped surrounding small-scale farmers improve their coffee cultivation and processing skills but has also been dedicated to cultivating unique coffee flavors. While maintaining tradition, it continuously innovates, creating many different characteristic coffees to meet the preferences of different consumers.
As it happened, Panama's CCD project provided an additional research platform. So in 2018, La Palma & El Tucan estate joined the project together with Altieri estate! Altieri estate (a local Panama estate) provides the beans, while La Palma & El Tucan provides the processing technology—one solving the local bean source, the other solving the processing technology. What a perfect combination!
Special Processing Methods Born from the CCD Project
In the CCD project, you can see many completely different processing methods, such as: low-temperature anaerobic fermentation, static fermentation processing, dynamic fermentation processing, super natural processing, and so on~ Various different combinations emerge one after another.
By gathering different techniques from various estates and combining and innovating different coffee bean processing methods, coffee beans with entirely new processing can develop unique flavors—and this is one of the main purposes of the CCD project.
