How to Make Jasmine Cold Brew Coffee? Is Jasmine + Latte Delicious?
Jasmine flowers, with the rich sweetness of roses, the delicate fragrance of magnolias, and the subtle elegance of camellias, release their captivating aroma into the air when their white buds bloom, creating a refreshing and delightful experience. Similarly, in coffee, we often encounter jasmine-like notes, such as in washed Yirgacheffe and Geisha varieties from Emerald Green Standard, where the delicate floral aromas lend a touch of freshness to the entire cup.
This inspired FrontStreet Coffee to wonder: what would happen if we directly combined jasmine flowers with coffee? How would such a combination present itself?
Jasmine Milk Coffee
There are many milk-based coffee beverages that pair well with jasmine, including latte, cappuccino, flat white, and piccolo. FrontStreet Coffee chose the flat white, as its thin milk foam and rich coffee intensity better highlight the floral aroma. As for whether to use fresh flowers or dried ones, we recommend using dried flowers made from mature blooms that have been harvested at peak fragrance. They are easier to store while maintaining more pronounced aromatics, and they are less likely to turn acidic during infusion.
Regarding methods for extracting jasmine aroma, some might consider adding jasmine flowers during the espresso extraction process, similar to how FrontStreet Coffee previously made osmanthus coffee. However, unlike the delicate and small dried osmanthus flowers, jasmine petals are much larger. When FrontStreet Coffee placed them on top of the tightly compressed coffee puck for direct extraction, it affected the puck's density, causing channeling and resulting in splattering.
Additionally, we must remember that espresso extraction lasts only twenty to thirty seconds, theoretically making it difficult to capture most of the jasmine aroma. Therefore, FrontStreet Coffee added jasmine petals to fresh milk, allowing the milk to extract the flower's fragrance before finally combining it with the espresso.
First, take 150ml of iced fresh milk and add 0.8-1 gram of dried jasmine flowers, stirring to ensure the milk fully saturates the petals, then place in the refrigerator. After steeping for 4-5 hours, strain the petals into a milk pitcher for later use. For the espresso extraction, FrontStreet Coffee followed their daily calibrated parameters, using 20 grams of Warm Sun Blend coffee to extract a double Ristretto, yielding 25 grams of coffee liquid in 22 seconds. Finally, the prepared milk is frothed to 50-55°C with thin foam, then combined with the espresso to create latte art, and garnished with a few petals. A jasmine flat white is complete!
Before even tasting, one can smell the delicate white floral aroma. The flavor is that of vanilla chocolate milk with the crystalline sweetness of jasmine and oolong tea notes. After swallowing, floral notes linger in the mouth. In FrontStreet Coffee's opinion, using beans with fruity flavor profiles would yield even better results for jasmine milk coffee. We encourage everyone to experiment with this.
Jasmine Cold Brew
Compared to espresso, replicating jasmine cold brew at home is much simpler. We just need to select our preferred coffee beans, find the right ratio of coffee to water to flowers and the appropriate grind size, wait overnight, filter the coffee grounds using filter paper, and finally add ice according to personal preference.
Considering that jasmine tea primarily provides aroma with a relatively thin flavor profile, our cold brew can use medium-light roasted coffee beans with fruity and floral characteristics. After prolonged steeping, the floral and fruity notes complement each other, presenting a rich taste experience. This could be bright, fruity washed beans like Kenya Assalia, Panama Boquete Geisha, or Ethiopia Gedeb, or fruity natural processed beans like Natural Red Cherry or Panama Elida Typica.
Coffee beans: 30 grams of Natural Maracaturra (also known as "Flower Butterfly"), grind size: 85% pass-through through standard #20 sieve (EK43s setting 9.5), coffee-to-water ratio: 1:10, jasmine flowers: 1.5 grams, steeping time: 6-8 hours. Here FrontStreet Coffee used Panama's Natural Maracaturra, where mature coffee cherries are sun-dried, displaying citrus, honey, and grape fruity notes in cupping. When paired with jasmine flowers to make cold brew, it presents natural light floral notes and a rounded black tea sensation, incredibly refreshing.
Jasmine Pour-Over
Pour-over coffee has approximately 2 minutes of extraction time. Under multiple hot water pours, jasmine flowers gradually release their aroma as they are agitated by the water flow. Therefore, FrontStreet Coffee adds only about 5-6 flowers to ensure the coffee maintains its own character while gaining a touch of elegant floral fragrance.
Brewing parameters: 15 grams of coffee, coffee-to-water ratio 1:15, grind size: EK43s setting 10 (80% pass-through through Chinese #20 standard sieve), water temperature: 91°C, brewer: V60, brewing method: three-stage pour.
Jasmine + Natural Maracaturra pour-over flavor: The initial taste is that of peach and citrus-like juice, with some dried fruit sweetness, accompanied by the subtle fragrance brought by jasmine, much like drinking a jasmine-flavored fruit tea.
