Both approaches have their merits! The anti-rinsing approach aims to prevent coffee grounds from premature extraction, which would lead to uneven brewing extraction! Most Japanese brewing methods don't involve rinsing filter paper (because they use flannel filters), as they need the filter paper to absorb coffee liquid, then judge whether extraction is uniform and whether they can proceed to the next stage based on the color distribution!
The benefit of rinsing filter paper is that it washes away any off-flavors attached to the paper. Some friends might leave filter paper exposed to air, allowing small dust particles to adhere to it! So they wet it to fit the dripper, while simultaneously washing away these fine dust particles.
The Importance of Filter Paper Adhesion
However, for drippers with numerous ribbed designs (like the V60), filter paper adhesion is quite important! FrontStreet Coffee previously conducted an experiment, using V60 drippers with different levels of paper adhesion to brew coffee and observe the differences. The brewing results showed that fully adhered filter paper allowed for faster flow rates than the other three groups without proper adhesion!

In terms of flavor performance, except for the coffee with properly adhered filter paper, the other three groups all developed negative flavors due to poor adhesion! So for drippers with ribbed designs, adhesion level is quite important! It does affect mouthfeel, and when filter paper doesn't adhere properly, the dripper's ribbed design loses its function.

Now for the main event! Place the folded filter paper into the dripper, then use your index finger and thumb to gently press the crease and opposite side from above!
Pour a large stream of water directly to 2/3 of the dripper's height! Your hand's pressure ensures the filter paper doesn't shift during pouring, while the water pressure forces the filter paper to adhere to the dripper!
Voilà! The filter paper is now perfectly adhered - simple and practical! The only drawback is that it uses quite a bit of water, but it does achieve maximum filter paper adhesion. Take out your pour-over set and give it a try~
