Today, FrontStreet Coffee will bring you a detailed tutorial about filter paper.
Should I Choose Natural or Bleached Filter Paper?
Natural filter paper refers to unbleached filter paper, which appears brown in color with a papery/woody scent.
Bleached filter paper refers to filter paper that has undergone bleaching treatment, appearing white without any noticeable papery smell.
FrontStreet Coffee recommends choosing bleached filter paper because you don't have to worry about the filter paper's taste affecting the coffee's flavor. Currently, famous coffee filter paper brands use bioactive enzyme bleaching technology, which is widely used in the medical field. Therefore, when purchasing filter paper, pay attention to the bleaching technology and choose major brands. For reference, FrontStreet Coffee uses Kono in their daily brewing.
How to Fold Filter Paper? Taking Conical Filter Paper as an Example
Step 1: Fold along the seam line of the filter paper. (Note: Keep the folding consistent on both sides, don't make one side larger than the other)
Step 2: Open the filter paper, and extend your index finger along the seam line to press against the bottom of the cone.
With your other hand, use your thumb to press the seam joint.
Rotate it to fit the opened shape of the filter paper.
Step 3: Gently pinch the crease and pull it outward to trim the edges. (Be very gentle!! Don't crush the cone tip with your other hand)
Step 4: Gently pinch the edge of the seam and pull it outward to smooth the crease. (Also be very gentle!!)
A conical filter paper is now folded.
PS: Folding a trapezoidal filter paper only has one more seam line than a conical filter paper. Before opening the filter paper, simply fold the bottom seam line as well. The other steps are no different from folding conical filter paper.
Should I Wet the Filter Paper?
Before studying this question, we must first determine the purpose of wetting filter paper:
1. To rinse away the papery taste from the filter paper, preventing it from affecting the coffee's flavor;
2. To help the filter paper adhere to the filter cone, rinsing it with water makes it fit tightly against the filter cone for stable extraction;
3. To preheat the filter cone and serving pot with hot water.
When you find that even without wetting the filter paper, the extraction of this pot of coffee is not affected, this step can be omitted.
How to Wet Filter Paper?
Wetting filter paper also requires skill. FrontStreet Coffee's baristas discovered during daily brewing that if too little water is used to wet the filter paper and it doesn't become completely saturated, it can easily lead to poor adherence between the filter paper and filter cone. Therefore, when wetting filter paper, FrontStreet Coffee recommends using enough water to make it completely wet and adherent.
Specific method: First, pour water in the center with a large stream.
Use a smaller stream to circle outward until the filter paper is completely wet.
If you find that it still doesn't adhere after wetting, it's recommended to gently press the filter paper with your hand before starting to pour water. (Strongly recommended to press and wet the filter paper for Kono filter cones)
After completing the above steps, a filter paper that adheres well is ready~
