Analysis of Pour-Over Coffee Bed Craters: How to Judge Extraction Issues by Coffee Ground Shape?
Many coffee enthusiasts develop the habit of observing the coffee grounds bed after each brew. If the coffee grounds are evenly distributed along the filter cup's edge, forming a beautiful and neat grounds bed, they subconsciously believe this cup of coffee should taste good.
However, FrontStreet Coffee has noticed that some coffee friends are particularly "superstitious" about attractive grounds beds, even concluding before tasting, "I can tell this coffee won't taste good just from looking at the grounds bed." Is this really the case?
Why Observe the Grounds Bed?
By examining the grounds bed, we can indeed identify whether mistakes occurred during our brewing process. For instance, whether the water flow was stable, if there were deviations in the circular pouring motion, or if the coffee grind was uniform and appropriately sized. As one netizen put it, "A deformed grounds bed is just showing your friends far away how you messed up the brew!"
When we finish brewing a cup of coffee and find the taste off, the grounds bed might help us identify the problem more quickly.
For example, if the coffee tastes bitter and astringent, and the grounds bed surface appears wet and muddy, this indicates too many fine particles causing over-extraction; if the coffee has obvious off-flavors and the grounds bed is uneven in thickness, it might be due to unstable water flow control during circular pouring; if the taste is weak and the coffee bed separates from the filter cup wall, this is usually extraction unevenness caused by too small circular pouring or interrupted water flow...
Attention! No "Standard" Grounds Bed Exists
Everyone has their own standards for what constitutes an attractive grounds bed shape. Some prefer the "volcano crater," others pursue the "cone crater," while some admire the "deep crater." If you want an attractive grounds bed, as long as you practice your pouring technique more, creating a uniformly distributed bed is not difficult.
There are thousands of variables that affect whether a pot of coffee tastes good, and an attractive grounds bed cannot completely reflect the flavor profile of a coffee. An attractive grounds bed might not taste perfect, and an unattractive grounds bed can still produce delicious coffee. The grounds bed is merely a reference factor for judging whether our coffee brewing framework is reasonable—it's definitely not the main cause, so don't put the cart before the horse. FrontStreet Coffee believes that only when brewing techniques create significant defects in the grounds bed is it worth investigating the causes and making corrections.
Don't Get Too Caught Up in the Grounds Bed
Instead of obsessing over how to create an attractive grounds bed, it's better to first understand the main flavor profile of the coffee, taste whether there are any defects in the aftertaste, and then use the grounds bed to adjust or correct brewing problems. Such as roast level, filter cup characteristics, grind size, coffee-to-water ratio, water temperature, time, and other key factors.
If you encounter off-flavors during brewing but don't know how to adjust, you should start from the basics. For a cup of evenly extracted coffee, the grounds bed should present a bowl shape, with consistent thickness of the surrounding coffee walls, extending gradually along the filter cup's contour to the bottom, and a flat bottom crater.
Undeniably, producing a smooth grounds bed is satisfying—it shows that the coffee maker's painstaking practice of pouring technique has finally paid off, thus finding a full sense of accomplishment. This might be why everyone always pursues their "dream grounds bed."
