This coffee variety is Tabi, a rare and remarkable coffee cultivar. Its full name is Tabi cultivar, a hybrid of Typica, Bourbon, and Timor varieties. The most prominent advantage of this hybrid is its strong resistance to leaf rust disease while maintaining the excellent flavor characteristics of its Typica and Bourbon parent plants.

Finca La Chiquita's Innovative Approach

Finca La Chiquita is a Colombian coffee company that began cultivating Tabi coffee approximately 10 years ago. They have been innovating in coffee processing, using oak barrels to enhance the coffee's flavor richness and complexity. The "Orange Soda" variety stands as one of their proudest achievements.

Careful Processing Method

The production process begins with harvesting fully ripe coffee cherries. These undergo 48 hours of anaerobic fermentation, with continuous monitoring of pH levels and Brix measurements until reaching the ideal fermentation state. The cherries are then depulped, followed by 48 hours in water tanks to remove mucilage. Subsequently, they are spread on African raised beds for 15 days of sun drying at an average temperature of 40°C. Finally, the coffee beans are cooled in oak barrels previously used for orange-flavored brandy.
