Introduction to Costa Rica Tarrazú Cantet Estate Mozart Raisin Honey Process Coffee
FrontStreet Coffee Musician Series: Mozart
From the excellent coffee-producing region of Tarrazú in Central America's Costa Rica, this specialty coffee features the unique raisin honey processing method, giving it a wonderful white wine-like flavor and texture, with notes of sweet strawberry cake.
Tarrazú: An Ideal Coffee Growing Environment
Tarrazú belongs to the fertile volcanic region of Central America. Here, the humid climate and fertile volcanic rock soil, combined with abundant annual rainfall, high altitude, and dense natural forest shade, provide exceptional growing conditions for coffee cultivation. No pesticides or artificial fertilizers are used during the growing process. Nearly 95% of coffee beans produced in the high-altitude Tarrazú region are classified as Strictly Hard Beans (SHB), typically grown at altitudes above 1,500 meters.
La Minita Estate: World-Class Excellence
Currently, the Tarrazú cooperative has 26 member farms. Among them, La Minita Estate is one of the most renowned coffee estates in Tarrazú. La Minita produces approximately 1 million pounds of coffee beans annually. All coffee beans from the estate undergo careful selection to remove defects, with only 15% earning the La Minita Estate seal, while the rest enter the general coffee market. However, these market-available beans still command higher prices than other Central American coffees. La Minita's strict management of every aspect of coffee production has established its world-class reputation, making it a globally recognized coffee estate.

Raisin Honey Processing: Refreshing, Sweet & Balanced
Raisin honey processing involves double fermentation. First, coffee cherries are dried to a raisin-like state, then the fruit skin is removed, followed by honey processing fermentation. The retention rate of mucilage is higher than in other honey processes, resulting in more intense fermentation flavors similar to white wine, delivering a surprisingly refreshing, sweet, and balanced profile.
According to the retention rate of coffee cherry mucilage, honey processing can be divided into "white honey," "red honey," and "black honey." The Musician Series features carefully selected coffee beans from the Canet region, processed using different honey methods and named after musicians.
