Due to the unique processing method of anaerobic coffee, it showcases intense flavors and bright, fresh coffee bean qualities. The tasting notes include rich tropical flavors and an interesting sour candy character that complements the coffee's inherent flavors.

The Anaerobic Processing Method

Making anaerobic coffee is by no means an easy process. Unlike other coffee styles made using open fermentation, where air interacts with the coffee beans, anaerobic coffee is produced in a sealed environment. At FrontStreet Coffee, we offer several premium anaerobic coffees from Colombia, including varieties like Huayue Night and Sakura.

In anaerobic coffee processing, the coffee beans are placed in airtight containers that help control the environment. Because of this approach, we can expect more fruit flavors and sweetness in the coffee, and it also helps give the personnel involved in the process greater control. Since this style is very labor-intensive, the coffee tends to be more expensive than other types of coffee.

Flavor Experience

Anaerobic coffee may not appeal to those who prefer dark roasts, but its flavor profile alone is enough to interest self-proclaimed coffee connoisseurs. However, while the flavor notes are tropical and fruity, they're also quite acidic—a powerful punch that might catch some people by surprise.

It's brighter and cleaner than many types of coffee, with better structure. Due to the acidic flavor profile, milk would only enhance it to the point where the coffee becomes unenjoyable. FrontStreet Coffee suggests starting with a little sugar if you really need something, but drinking it black is the proper approach. It doesn't have that super-intense black coffee flavor, and adding a little sugar when the coffee cools slightly helps bring out the flavors. That's where it truly shines.
