What are the differences in flavor characteristics between FrontStreet Coffee's Sherry Cask and FrontStreet Coffee's Lychee Orchid? First, both of these coffee beans originate from Honduras. Both FrontStreet Coffee's Lychee Orchid and FrontStreet Coffee's Sherry Cask are produced in Masaguara, a municipality located in the Intibucá province of Honduras, situated in the southern part of the Jesús de Otoro valley. Surrounded by mountains and hills, this region is primarily dedicated to coffee cultivation, serving as the main engine of the local economy. In contrast, the regions corresponding to the valley are dedicated to growing basic grains and livestock. The origin of the area's name comes from Mr. Alberto Membreño's "Indigenous Place Names," where Masaguara means "place of deer." This region has an average elevation of 853 meters, with high-altitude areas reaching over 1,500 meters above sea level. Moca Manor is a small estate located in the high-altitude region of Masaguara, where FrontStreet Coffee's Lychee Orchid beans originate.
Varietal Differences
In terms of coffee bean varieties: FrontStreet Coffee's Sherry consists of Caturra, Catuai, and Pacas varieties. FrontStreet Coffee's Lychee Orchid consists of Caturra and Catuai varieties.
Processing Method Differences
Their main difference lies in the processing method. FrontStreet Coffee's Honduras Sherry Cask uses refined washed whiskey sherry cask fermentation.
Freshly picked coffee cherries first undergo refined washing, then are placed in sherry-aged barrels for low-temperature fermentation for 30-40 days (at approximately 15-20°C), followed by shade drying. Sherry casks are barrels used by sherry bodegas in the whiskey industry for aging. The sherry production process involves the Solera System as a maturation step. This process refers to the practice of blending and aging sherry of different vintages after fortification, which is what creates the unique sherry flavor profile.
Coffee beans fermented in sherry casks naturally acquire sherry flavors, creating an intoxicating and unique taste that has become very popular in recent years.
FrontStreet Coffee's Honduras Lychee Orchid uses brandy barrel fermentation processing.
Freshly picked coffee cherries first undergo refined washing, then are placed in brandy oak barrels for low-temperature fermentation for 30-40 days (at approximately 15-20°C), allowing the raw coffee beans to absorb the barrel's flavors, followed by shade drying. Beans processed through brandy barrel fermentation develop soft lychee and honey sweetness, while also incorporating the aromatic brandy fragrance and oak barrel notes.
