Since Honduras has both lowlands and mountainous terrain, the coffee it produces is graded according to altitude. This is the same as Colombian coffee and Guatemalan coffee.
- Strictly High Grown: Altitude above 4,400 feet
- High Grown: Altitude 3,900-4,400 feet
- Central Standard: Altitude below 3,900 feet
For those who want to drink the finest coffee that Honduras has to offer, there is also the option of bird-friendly or shade-grown coffee—another step above strictly high-grown coffee. These bushes grow in the shade of other trees, which gives Honduras coffee beans more time to mature, absorb nutrients and minerals, and develop richer flavors.
Honduran coffee flavors vary depending on the region they come from, but some common flavor profiles include combinations of caramel notes, as well as tropical fruits and berries. It involves using water to remove the pulp more quickly before the coffee cherries have a chance to dry. This process produces some different flavors, but it uses quite a lot of water and can have negative environmental impacts.
The cold nights in certain regions of Honduras help delay the ripening of coffee cherries, which in turn leads to more wonderful sweetness.
