Coffee roasters began barrel aging programs out of curiosity or convenience. For others, it's a strategic partnership with distilleries.

Novelty is a significant selling point, especially in the early stages of trends. Now everyone might think there's nothing special about it. But do you know how coffee barrel aging works? It's actually quite simple—just add green coffee beans to spirit barrels. During the fermentation process, some rum penetrates the barrels, imparting sponge-like distilled rum characteristics. The green coffee beans absorb many coffee flavors during the aging process. Generally, rum barrel-aged coffee carries notes of chocolate, honey, and rum!

Where did the idea of barrel-fermented coffee come from?

The combination of coffee and alcohol has long been favored by roastmasters and mixologists alike, but the idea of creating an artisan series of Kauai Coffee dates back to 2016. Kauai Coffee roastmaster Mike Wygant was inspired to start a Seed to Cup collaboration after working with other local Q Graders and hosting taste discovery workshops for Hawaii coffee farmers. Sun-dried Typica and Acacia were the first widely acclaimed limited-edition small-batch products.

The idea of barrel-aging Kauai Coffee was a natural next step for the Seed to Cup project's fermentation and experimentation. Kauai Coffee and Koloa Rum also collaborated to develop other products, including the award-winning Koloa Kauai Coffee Rum that debuted several years ago. Therefore, collaborating again to develop a coffee-based product was an opportunity we couldn't refuse.

Reusing rum barrels for coffee aging is also a sustainable practice that extends the barrels' lifespan to typically one to two times longer than used for rum aging, which aligns with our commitment to sustainability.
