Panama Deborah Estate Savage Geisha Coffee Beans: Flavor Profile and Pricing
Early in the morning, I saw in the group a live broadcast about Finca Deborah and coffee hunter Fan Dian posted by Brother Fei. Brother Fei said to hurry up and follow to check it out, so here's the article below. Actually, I had written an article about Finca Deborah a few days ago, but my curiosity wasn't as strong as it is now, and I didn't carefully discover some questions that should have been known. So today, let's revisit it together!
Unlike other coffee estates, Jamison Savage, the owner of Finca Deborah, first purchased a pristine forest and then planted coffee trees within it.
The farm is located at an altitude of 1,950m, making it one of the highest and most isolated farms in Panama. The entire farm operates on solar energy and a balanced ecosystem. Jamison believes that coffee trees thrive best when surrounded by local flora and fauna; the farm uses no pesticides. This sustainable agricultural approach, combined with advanced technical practices, has made Jamison one of the most impressive coffee producers in the world.
Finca Deborah has always been a destination for exquisite and high-quality coffee. One of their biggest exposures came after the 2017 World Barista Championship held in Dublin, when Berg Wu used their Geisha washed batch to win the championship. In 2015-2016, Sasa and Jamison launched a project to introduce the carbon maceration process to the Morgan Estate lot (a farm managed by Jamison) as well as Finca Deborah.
Undoubtedly, the quality of coffee produced in this region has set new standards in terms of quality and price. The area benefits from unique volcanic fertile soil, abundant water, regular rainfall, and dense vegetation. Many microclimates also contribute to the production of coffees with various flavor characteristics.
Savage Coffee Project
In addition to Finca Deborah, Jamison Savage has other coffee projects, with Savage Coffee being one of them. Savage Coffee is a project initiated by Jamison Savage in the Boquete region of Panama. The coffee beans in the Savage series are excellent and high-quality beans from different places, all processed uniformly at Finca Deborah.
FrontStreet Coffee is preparing to launch the Savage series Geisha, which uses anaerobic fermentation natural processing method. It has a very rich wine aroma, with prominent citrus and berry flavors. Freshly picked coffee cherries are placed whole into completely sealed metal containers, injected with carbon dioxide, and oxygen is expelled to create an anaerobic environment. This allows the coffee beans to ferment in an oxygen-free environment, slowing down the decomposition speed of sugars in the coffee bean pectin and the decrease in pH value, thereby obtaining higher sweetness and more special flavors. Morgan Estate
Morgan Estate is another project of his, located in the volcanic highlands of Chiriquí Province, Republic of Panama. This is a 12-hectare farm situated at altitudes between 1,700-1,850 meters, growing Arabica coffee of the Geisha variety. The farm was planted 8 years ago and is a typical example of how Geisha coffee thrives when planted in the right environment and given proper care. These trees are now in their prime and have produced award-winning Geisha. Morgan Estate is situated in a valley surrounded by dense tropical rainforest. We won't go into further detail here.
