Coffee Region
Aceh is located at the northwesternmost tip of the Indonesian archipelago. As it lies on both sides of the equator, it has a typical tropical equatorial maritime climate. It is hot as summer all year round, with an average annual temperature of about 27 degrees Celsius. It is hot and rainy with abundant precipitation. From October to March each year, influenced by Asian and Pacific air currents, it is Indonesia's rainy season with plentiful rainfall and cool climate. From April to October, influenced by the continental air currents from Australia, with less moisture brought by the air currents, the climate is dry and hot, which is considered the dry season.
Lake Tawar is located in the Gayo Highlands north of Aceh Province, Sumatra. It is a crater lake left behind from a volcanic eruption millions of years ago, with a lake surface altitude of 1,100m. Due to inconvenient transportation in early years, coffee cultivation only began in the 1930s. Coffee is grown at altitudes of 1,200-1,600m, mostly using traditional shade cultivation. In the morning, there are natural cool clouds and mist; at noon, bright sunshine; and in the afternoon, there are often showers. This natural microclimate and volcanic soil are quite suitable for cultivating coffee beans. The coffee beans produced here are large and emerald green, so they are called "emerald Mandheling" by Taiwanese coffee connoisseurs, and more commonly referred to internationally as Lake Tawar Mandheling.
Coffee Variety
Among the coffee varieties in Sumatra, there is a rather special variety called "Longberry Mandheling." Longberry coffee trees grow very slowly, taking 7 years to mature and bear fruit, while general coffee tree species only need 3 to 4 years. At the same time, due to its low yield, it is relatively rare on the market.
Longberry originally comes from the Harrar region of Ethiopia, Africa, and has a cultivation history of three centuries in Aceh Province. Different from other coffee bean varieties, the name of this batch of coffee beans comes from their elongated shape. Some people also call it "long strip Mandheling." It is a natural mutation of Typica.
Coffee Bean Processing Method
Wet-hulling is a rapid method for processing coffee beans. It involves removing the skin and pulp of the coffee beans, brief fermentation, drying, removing the mucilage and parchment layer, and continuing with the final drying until the moisture content drops to 12%. Wet-hulled Mandheling coffee beans obviously show varying degrees of compression cracks, with the beans appearing dark bluish-green. Due to this processing method shortening the drying time to only two to four days, the fermentation period of the coffee beans is shortened, and the acidity is greatly reduced. Relatively, the thickness increases, with prominent caramel and fruit aromas, even carrying herbal or grassy scents as well as woody odors, thus forming the unique regional flavor of Sumatra. FrontStreet Coffee uses the Kono filter cup when brewing Indonesian coffee region beans. The ribs of the Kono filter cup are less than half the height of the filter cup. This design is actually intended to ensure that after wetting, the filter paper tightly adheres to the filter cup wall, limiting airflow. This increases the water absorption time of the coffee powder particles, resulting in more evenly extracted coffee and enhancing the mellow taste. Additionally, the groove skeleton at the bottom of the Kono filter cup is a key design that allows the subsequent brewing to produce a siphon effect.
Recommended water temperature: 87-88°C
Grind size: Coarse sugar size (70% pass-through rate with China No. 20 standard sieve)

FrontStreet Coffee brewing method: Bloom with 30g of water for 30 seconds, pour with a small stream in circles to 125g, then divide. When the water level drops and is about to expose the coffee bed, continue pouring to 225g and stop pouring.
