Origin: Ethiopia, Yirgacheffe, Kochere
Altitude: 1800-2200 meters
Variety: Heirloom (local native varieties)
Processing: Washed
Brewing Recipe
V60 dripper, water temperature 89-92°C, coffee-to-water ratio 1:15, using 15g of coffee grounds to 225g of water. Grind setting: BG#5F (80% pass-through rate with China #20 standard sieve). Three-pour extraction method.
First Pour (Blooming): Use twice the amount of water as coffee grounds (30-40g). Pour from the center of the coffee grounds, spiraling outward to wet all grounds evenly. Bloom for approximately 25-30 seconds.
Second Pour: Start from the center and spiral outward, avoiding the edges where coffee meets the filter paper. Pour to approximately 120-130g, then wait until the coffee bed becomes visible before beginning the next pour.
Third Pour: Pour directly from the center to reach 225g total. The entire extraction (including bloom time) should complete by 2 minutes. Once finished, remove the coffee grounds.
