Omar Arango, owner of Colombia's San Luis Estate, has been growing coffee for over thirty years. He is dedicated to improving the processing methods and quality of specialty coffee, learning more efficient harvesting and grading techniques, and making the best use of available resources to achieve optimal results.

Once harvested, coffee cherries from San Luis Estate are immediately processed. Mr. Omar Arango uses local mountain spring water for washing and sorting. After removing the skin and pulp, the beans are placed on African raised beds for 24 hours of natural sun drying.

Additionally, San Luis Estate is one of only two certified estates in Colombia producing the natural Pink Bourbon variety. Pink Bourbon is a natural hybrid of Red Bourbon and Yellow Bourbon, making it extremely rare. The Typica variety featured in this release is also uncommon in Colombia and offers exceptional flavor quality.

Tasting Description

"The dry aroma carries sweet flavors like peach. During brewing, cherry-like notes continuously emerge. Upon entry, the acidity is bright, with hibiscus and kumquat's aromatic acidity, mixed with the fragrance of aiyu and lemon, reminiscent of eating spoonfuls of aiyu jelly. As it cools, subtle floral notes appear, and the fructose sweetness gradually becomes more pronounced, complemented by hints of lemon, making the coffee even more complex."
