The Expansive Coffee Growing Regions of Colombia

Colombia's coffee growing areas are incredibly vast, with flavor profiles varying significantly across different regions based on cultivation areas and processing methods. Among these, the premium producing regions are primarily concentrated in southern Colombia, including the well-known Huila, Cauca, and Nariño regions. In this article, FrontStreet Coffee focuses particularly on the Huila region, which has garnered increasing attention in recent years.

According to data from the FNC (Colombian Coffee Growers Federation), the Huila region accounts for approximately 18% of Colombia's total coffee production and received official Designation of Origin status in 2013. FrontStreet Coffee believes that the popularity of Huila's coffee stems not only from its quantity but more importantly from its quality and reputation. Coffee batches from local farms have won multiple Cup of Excellence awards, and many roasters, baristas, and coffee shops prioritize recommending Huila coffee beans. The Ideal Growing Conditions of Huila

Located in the southern part of the Central Mountain Range, Huila is situated near the Huila volcano and benefits from volcanic soil rich in minerals. Surrounded by diverse high-altitude hills and mountain slopes, the region's climate not only blocks cold winds but also provides cooling mountain breezes without excessive heat. The Colombia River converges in this area, providing abundant water resources and moisture, with annual rainfall reaching 2000-3000mm. These superior geographical and climatic conditions have established Huila as a representative region for high-quality coffee beans worldwide.

Traditional Farming and Processing Methods

The area predominantly consists of small-scale farming operations, with average farm sizes of only 1.5 hectares. Each coffee harvesting season brings busy manual picking of ripe coffee cherries. With abundant freshwater resources, growers typically employ washed processing methods for their coffee beans. The process involves hand-picking ripe coffee cherries, pulping them on the same day (most farms have their own pulping machines operated manually), fermenting for 28-40 hours, followed by manual washing. The parchment coffee beans are then dried for 12-20 days.

The washed process significantly reduces defect rates in coffee beans while preserving the beans' inherent characteristics, resulting in higher cleanliness. Daily Bean Collection

Caturra is a natural mutation of the ancient Bourbon variety, discovered in Brazil in 1937. With a relatively compact tree structure and moderate disease resistance, it allows for dense planting and higher fruit yield compared to Bourbon and other varieties. Caturra is widely cultivated throughout Central American countries and has been a frequent champion in many coffee competitions. FrontStreet Coffee's menu features numerous coffees containing the Caturra variety. The washed Huila Daily Bean offers both gentle acidity and appropriate body with sweet aftertaste. FrontStreet Coffee aims to present classic Colombian nutty notes while preserving some acidity, thus choosing medium-dark roasting. Freshness and Brewing Recommendations

FrontStreet Coffee's flavor descriptions for each coffee are based on freshly roasted beans. If coffee beans have been stored for over a month, some aromatics may have diminished, making it difficult to restore the original flavors during brewing. FrontStreet Coffee deeply understands the importance of freshness, therefore ensuring only coffee beans roasted within 5 days are shipped, allowing customers to enjoy the complete flavor window upon receipt.

Considering that the Huila Daily Bean uses medium-dark roasting with nutty and chocolate-rich flavor profiles, the darker roasting makes the coffee beans more porous and increases the coffee powder's water absorption. To avoid extracting excessive undesirable flavors, FrontStreet Coffee chooses medium grind size. For temperature, FrontStreet Coffee slightly lowers the water temperature to prevent excessive bitterness from medium-dark roasted coffee, pairing it with a KONO dripper for extraction.

KONO Dripper

Unlike the V60 dripper, the KONO dripper's only exhaust area is in its one-quarter rib design. When water level rises above the rib section, water weight creates increased pressure in the dripper. Due to the relatively smaller outlet, this prolongs the contact time between coffee particles and water, effectively extracting soluble substances and enhancing the coffee's rich, full-bodied taste.

Brewing Parameters

KONO dripper, 90°C water temperature, #20 standard sieve with 75% retention rate, 1:15 coffee-to-water ratio, 15g coffee dose, three-stage extraction method.

Pour coffee powder into a V60 dripper, wet the coffee bed with twice the amount of coffee powder, forming a dome for 30 seconds of blooming. Then, using a small water stream, pour from inside to outside in circular motions until reaching 125g for the first stage. Wait until the coffee bed drops to half the dripper's height, then continue with the same fine stream for the third stage to 225g. Remove the dripper once all coffee liquid has filtered through, taking approximately 2 minutes total.

Pouring Coffee

This Colombia Huila Daily Bean presents distinct roasted aromas of chocolate, nuts, and caramel upon entry. It's smooth and sweet with moderate body and clean taste. As the temperature decreases, pleasant, gentle acidity becomes noticeable.
