Brewing Technique
First, use 30g of water for a 30-second bloom. The coffee grounds will absorb water and expand, releasing carbon dioxide and preparing for the subsequent water addition. Then, use a small water stream for the second pour until reaching 125g, stopping when the water level drops to just above the coffee bed. Use a large water stream for the third pour, stopping at 225g. When the water level drops to just above the coffee bed, remove the filter cup. Avoid using the last 5g of water. Total extraction time: 2:00 minutes.
