Folding the Filter Paper
First, fold the bottom of the filter paper inward, then fold the sides in the opposite direction. Open the folded filter paper and place it in the filter cup, ensuring the filter paper fits as closely as possible to the filter cup. Place the filter cup on top of the serving pot.
Warming the Cup
Pour hot water from the pour-over kettle along the inner wall of the filter cup in a circular motion, slowly adding just a small amount. This serves two purposes: first, it helps the filter paper adhere more closely to the cup wall, and second, it removes any paper taste while also warming the cup. Once the serving pot is warmed, discard the hot water.
Adding Coffee Grounds
After pouring 15 grams of coffee grounds into the filter cup, gently shake the filter cup to level the surface of the coffee grounds.
Blooming
Pour 180ml of heated purified water into the pour-over kettle, controlling the water temperature between 88°C and 92°C. If the temperature is too high, the coffee will tend to become bitter; if too low, the coffee will tend to be more acidic. Starting from the center of the coffee grounds, slowly pour the hot water in a circular motion to moisten the coffee grounds. When the first drop of coffee begins to drip into the serving pot, stop pouring. Bloom for 10-20 seconds.
Split Pouring
Reset the scale under the serving pot to zero, then continue slowly pouring 75ml of hot water in a circular motion. After waiting 10 seconds, continue pouring the remaining hot water in a circular motion.
Serving the Coffee
Pour the coffee from the serving pot into your favorite coffee cup, and you can enjoy your own creation. Remember to warm the cup in advance, as this allows the coffee's aroma to be released to its fullest extent.
Flavor Profile
The coffee presents flavors of nuts, cream, cocoa, and herbal plants, with a soft berry acidity. The balance between sweet, sour, and bitter is harmonious, accompanied by brown sugar sweetness.
