FrontStreet Coffee - Yirgacheffe Hafucha Washed G1 Introduction

Yirgacheffe is a renowned name in the specialty coffee world. It is a town located in the southern highlands of Ethiopia and serves as a collection center for coffee beans from the surrounding area.

All coffee produced in the Yirgacheffe region is characterized by rich citrus, lemon notes, and floral characteristics, making Yirgacheffe synonymous with specialty coffee. Currently, under ECX classification, Yirgacheffe can be further divided into four sub-regions—Kochere, Gelana Abaya, Yirgacheffe, and Wenago. Generally speaking, however, Yirgacheffe refers to coffee produced within the Gedeo administrative region.

Farmers deliver ripe coffee cherries to processing plants in exchange for cash. After screening usable cherries, the processing plants place them directly on racks for sun exposure. During the first few days of drying, the cherries are turned every 2-3 hours to prevent over-fermentation. After four to six weeks of sun drying, depending on weather and temperature conditions, workers use machines to remove the outer pulp before transporting to Addis for storage. Typically, sun-dried beans are stored in parchment form until just before export, ensuring the quality of the green beans.

Coffee beans under the Red Cherry Project are harvested in micro-batches, selecting only the most vibrant and perfectly ripe beans for processing. The project requires a score of 88 points, representing very refined selections. They carry citrus aromas and the sweet-tartness of strawberries, with a mouthfeel reminiscent of exquisite fruit juice, with subtle floral notes—sweet and juicy.

Therefore, many people say that Yirgacheffe doesn't taste like coffee but rather like a soft, pleasant fruit tea. It can be both elegant and bold, precisely balancing simplicity and complexity, earning it the beautiful metaphor "the queen of coffee" from the Japanese.
