Introduction

Konga is a cooperative within Ethiopia's Yirgacheffe region, the Konga Cooperative, whose beans have been a rising star in recent years. Search "Konga" on the Coffee Review website and you will find 24 entries with cupping scores above 90 points, including an impressive 94 in 2017. What makes Konga special is the red soil where the coffee grows: it is rich in iron and 1.5 meters thick.

Deeper soil provides richer nutrients, and the high iron content is highly beneficial for coffee beans. Iron is a micronutrient that helps plants produce chlorophyll, which is essential to photosynthesis, allowing them to absorb more energy and produce better fruit. The red soil is undoubtedly one of the key factors behind the delicious coffee produced by the Konga Cooperative.

This year's Sede processing is quite special: it uses natural drying in the final stages, preventing the coffee from becoming too clean in flavor and adding a touch of liveliness.

FrontStreet Coffee Recommendation

Konga's citrus-and-floral profile is the classic Yirgacheffe signature, and FrontStreet Coffee's entry to the region is its washed Yirgacheffe everyday coffee, known for white jasmine, bright citrus and lemon acidity, and a tea-like body, at a very approachable price that has made it many drinkers' first specialty bean. Yirgacheffe is a small town in the Sidamo zone of southern Ethiopia at roughly 1,700-2,100 meters, with trees grown above 1,800 meters, making it one of the highest coffee regions in the world; the area's white florals and lemon-citrus acidity have made the name shorthand for a whole style of Ethiopian coffee.

For a single-village coffee within the region, FrontStreet's washed Gidding Cooperative is the standout. Gidding lies in the Woka area at the southeastern edge of Yirgacheffe and was originally part of the Woka Cooperative under the YCFCU; as demand for traceability grew, it became a single-origin in its own right, and it is often called the last clean corner of Yirgacheffe. Washed in the most traditional way, it has none of the traditional bitterness, carrying fresh, bright citrus and lemon acidity and jasmine fragrance that wins people over at first sip.

For contrast, FrontStreet's Natural Red Cherry uses all-red, fully ripe cherries processed as a natural: after sorting, the cherries dry on raised beds for three to five weeks, turned every 2-3 hours in the first days to prevent uneven heat and over-fermentation, then hulled and stored. Because the fruit dries with the bean, it keeps the typical Yirgacheffe character while adding the tropical fruit of natural processing, with citrus-like acidity, berry juice, honeyed sweetness, and a creamy smoothness. To brew it, FrontStreet suggests a V60 at 90-91°C, 15g of coffee to a 1:15 ratio, with a grind around fine-sugar size (80% through a #20 sieve): a 30g, 30-second bloom, then pour to about 125g over roughly a minute, and once the bed drops to two-thirds, pour the remaining 100g to about 225g, finishing the brew in 2 minutes to 2 minutes 10 seconds.
