Even a coffee connoisseur, who can determine with one sip that these coffee beans were processed using the natural method, might struggle to articulate exactly what "natural flavor" tastes like, perhaps hesitating and unable to express it clearly.

Natural flavor is acquired during the natural processing method. As coffee cherries transform into green coffee beans, two different methods are commonly used: washed and natural processing. The natural method involves drying the coffee cherries under the sun, which preserves the complete natural mellow flavor of the beans and develops a mysterious special aroma from fermentation. This special aroma is what enthusiasts refer to as "natural flavor" - something that requires careful appreciation!

Ethiopia is one of the world's most important coffee exporting countries, with major growing regions including Sidamo, Yirgacheffe, Kochere, Harar, and Jimma. Sidamo is a primary specialty bean growing area, known for producing coffee beans with excellent fruit characteristics and delicate, elegant flavors. The well-known Yirgacheffe is actually a small city within Sidamo, meaning "wetland" in the local language.
