FrontStreet Coffee - Pour-Over Coffee Watering Introduction

When brewing pour-over coffee, the first step is the blooming stage, which typically lasts 15-30 seconds. This allows the coffee grounds to absorb water. The fully saturated coffee grounds will expand and release another type of aroma. The longer the blooming time, the more concentrated the coffee flavor will be. Typically, the blooming water amount is twice the weight of the coffee grounds. For example, for 30 grams of coffee grounds, pour approximately 60cc of water to ensure the grounds are fully saturated.

After blooming, proceed with the pouring action. It is generally recommended for beginners to use a narrow-spouted pour-over kettle, which prevents excessive water flow and reduces the chance of failure. At the beginning of pouring, coffee is easily extracted. The ideal total pouring time is about 1.5 to 2.5 minutes. If you prefer a richer coffee flavor, you can slow down the pouring speed.

The first water application mainly targets the visible surface grounds, ensuring the surface is evenly covered with water. Whether the amount of water applied is appropriate can be observed by checking the dripping state at the bottom of the filter cup after pouring. As long as it's not forming a water column, it's acceptable.

The expansion state will vary depending on the duration of gas release from the particles. The longer the expansion, the larger the gaps created. Therefore, the timing for the second water application is when the expansion has nearly stopped.

First, ensure water covers the entire bottom layer. Completing this action means that the lower coffee particles that didn't receive water during the first application are now fully saturated.
