FrontStreet Coffee - Ethiopian Sidamo Pour-over Introduction

The Sidamo growing region ranges from 1,400 to 2,200 meters above sea level and is a renowned specialty coffee area in southern Ethiopia, bordering Kenya. Washed Sidamo green beans appear light green in color, with small, oval-shaped beans that are full-bodied and of consistently high quality. They offer a rich, mellow aroma with an endless aftertaste and a wild beauty. Sidamo coffee flavors are incredibly diverse, with different soil types, microclimates, and countless native coffee varieties creating distinct differences and characteristics in coffee produced by various towns.

From 2010-2012, Sidamo coffee consistently achieved high scores of 92-94 from the authoritative American coffee evaluation website CR, demonstrating the exceptional quality of green beans from this region. The area features towering mountains, highlands, plateaus, valleys, and plains, creating diverse topography. The local geology consists of nutrient-rich, well-drained volcanic soil with depths of nearly 2 meters, with surface soil appearing dark brown or brown. The region's greatest advantage is that soil fertility is maintained through the cycling of organic matter, using fallen leaves from surrounding trees and plant residues as natural fertilizers.

  • Dry Aroma: Lemon, magnolia, orange blossom, roasted almonds, cream chocolate
  • Wet Aroma: Dates, citrus, cane sugar, cream chocolate
  • Flavor Profile: Full floral notes, moderate fruit acidity, smooth and delicate with orange juice sensation. Light bitterness with a refreshing quality. As the coffee cools, magnolia and lemon flavors gradually emerge, with aftertaste of cream chocolate and cane sugar.

Pour-over Ratio

The legendary pour-over Sidamo.

15g of coffee – medium-fine grind (Fuji Royal grinder setting 3.5) – V60 dripper – water temperature 91-93°C.

First pour 30g of water – bloom for 27 seconds – pour to 105g and pause – wait until the water level drops halfway before continuing – slowly pour until reaching 225g – avoid the tail end.

Water to coffee ratio 1:15 – extraction time 2:00.
