Lemon, flowers (jasmine, coffee flowers, wild ginger flowers, gardenia, etc.), and honey are the most classic flavor elements of washed Ethiopian specialty coffee. Still vivid from over a decade ago, when siphon brewing was popular, a pot of washed Ethiopian coffee would leave an intoxicating lemon blossom honey aroma in the upper chamber, blowing many people into the world of single-origin specialty coffee. The name Morea comes from these classic flavor elements of washed Ethiopian coffee—Nora means lemon/lime in Ethiopian languages, while Mare means honey, combining to create Morea—lemon honey.
The transliteration "Moliya" ingeniously incorporates the third floral flavor element, perfectly expressing the style this product aims to showcase. In our Lemon Blossom Honey/Moliya selection, we focus on the Sidamo region (also known as Sidama, though officially named Sidamo in ECX documents). Sidamo can be considered the birthplace of Ethiopian specialty coffee, with Yirgacheffe and Guji both being established as independent regions after gaining fame from being part of Sidamo.
Sidamo remains a large-scale region with unlimited potential. Even after Yirgacheffe and Guji were separated, its area is still several times larger than the combined area of both regions. ECX has divided it into five sub-regions: Sidamo A, Sidamo B, Sidamo C, Sidamo D, and Sidamo E. Due to its large area and numerous processing stations, its reputation and prices naturally don't match Yirgacheffe and Guji. Processing stations (or cooperatives, estates) with decent altitude and post-processing methods make this a paradise for finding exceptional value—our primary reason for focusing on this region.
Lemon Blossom Honey/Moliya undergoes rigorous testing through origin cupping, pre-shipment sample evaluation, and final warehouse sampling to ensure the flavor meets expectations before release. Lemon Blossom Honey/Moliya will definitely deliver the three elements of lemon, honey, and flowers. With specific roast profiles and proper bean resting, it may even reveal rare wild ginger flower notes—truly exceptional.
