To this day, Ethiopia still has a large number of wild naturally growing coffee trees. These "wild coffees" possess Ethiopia's most primitive and natural coffee flavors. Ethiopia has the world's most diverse coffee cultivation systems and an extensive gene pool, combined with diverse processing methods including natural, washed, and semi-washed, presenting complex and varied flavors. It can be said that the "flavor profiles" of most coffee producing regions worldwide can be tasted here, reflecting Ethiopia's inclusive "king of flavors."

Ethiopia has nine main coffee producing regions. As the Ethiopian territory is divided into eastern and western parts by the East African Rift Valley, lakes, volcanoes, lowlands, plateaus, and woodlands intermix, each evolving independently.

Sidamo is a province in Ethiopia and the superior administrative unit of the famous Yirgacheffe. The Sidamo producing region refers to all producing areas in Sidamo province except for Yirgacheffe. It is Ethiopia's southernmost coffee producing region, with an average altitude of 1400-2000 meters. The coffee produced here has noticeable sweetness, earning it the name "sweet coffee." Natural processed Sidamo has flavors close to floral notes but with a slight earthy taste. Washed processing brings nutty fruit aromas and subtle cocoa notes, but both share smooth mouthfeel and viscosity, with comfortable acidity and pleasant aromas.
