Ethiopian Coffee

Ethiopia grows coffee on plateaus at altitudes above 1,500 meters. The seven Harar plateaus are particularly notable as the birthplace of Arabica coffee. Currently, Ethiopia still has many native coffee forests, making it a true coffee gene bank that holds solutions to many coffee-related challenges. Ethiopian coffee beans are of exceptionally high quality with incredibly diverse flavors that few countries can match.

Regarding green bean processing methods, some regions use the natural (dry) process, others use washed processing, and some areas use both methods (like the Sidamo region). This diversity in processing is one reason why Ethiopian flavors are so varied. The three major coffee-producing regions in Ethiopia are Djimmah in the west, Sidamo in the central region, and Harar in the east. Among these, the most distinctive is Yirgacheffe from the Sidamo province. This coffee combines fruitiness, floral notes, and honey-like sweetness, with a tea-like quality that leaves a lasting impression, making it the entry point for many into the world of specialty coffee.

Of course, the wild taste of Djimmah and the distinctive wine-like aroma of Harar also drive many coffee enthusiasts crazy. The variation between different batches of Ethiopian coffee is significant, so it's important to pay attention to batch numbers when purchasing—two bags marked with the same producing region can have vastly different flavors. Additionally, early-harvest Ethiopian coffee is typically better, which differs from coffee in many other regions.

Sidamo Coffee

Washed Sidamo has a bright, clean taste with clear, bright fruit acidity and rich wine-like aromas. It carries subtle notes of tea leaves, roses, citrus, and apricot blossoms. The wet aroma reveals black chocolate, berries, and honey sweetness. It has excellent balance with noticeable sweetness and a cocoa-like aftertaste.
