FrontStreet Coffee - Introduction to Sun-Dried Yirgacheffe

Yirgacheffe is merely a sub-region in the Sidamo province of Ethiopia, nestled by mountains and water at the highest elevation. Due to its outstanding production methods and distinctive flavor profile, it has become Africa's most renowned coffee-producing region.

The mountain villages in the Yirgacheffe region are shrouded in mist year-round, with gentle breezes, cool but not hot temperatures, and rainy but not humid conditions. The original Yirgacheffe coffee trees were planted on the mountains by European monks. Today, they are mostly grown in farmers' backyards or intercropped with other agricultural crops. Each household's yield is limited, making it typical pastoral coffee. Yirgacheffe predominantly uses the washed processing method to preserve its fresh and clean taste, but a small amount of specialty beans is intentionally sun-dried to enhance the charming fruity aroma and body.

Sun-dried Yirgacheffe adheres to strict standards for harvesting red cherries (the fruit produced by coffee trees). Before sun-drying the coffee cherries, unripe green fruits or defective cherries are manually removed. During the sun-drying process, damaged or moldy cherries are removed again. After two weeks, the sugar and essence from the fruit pulp fully penetrate the coffee beans, and the moisture content drops to 12%. The hardened fruit pulp, pectin layer, and parchment are then scraped clean with a hulling machine. The extracted coffee beans undergo density and color inspection. After eliminating defective beans, workers manually remove any remaining defective beans that slipped through. This multi-layered screening process creates the clean and elegant character of sun-dried Yirgacheffe beans, characterized by rich and captivating fruit aroma.

Sun-dried Yirgacheffe: The sun-drying process is complex, but modern sun-drying techniques have become increasingly sophisticated. Compared to washed processing, it offers fuller body, potentially slight bitterness in the front end, and strong fruit flavors in the finish. Crucially, it doesn't lack the characteristic fruit acidity of Yirgacheffe.
