FrontStreet Coffee - Introduction to Sun-dried Yirgacheffe

Africa is one of the major coffee-producing regions. Among them, Yirgacheffe is undoubtedly the most shining rising star in this region, originating from Ethiopia, a country in North Africa.

After picking coffee beans directly from the trees, the most primitive method involves spreading fresh coffee beans on threshing grounds, allowing them to lose excess moisture through sunlight and wind. This process causes the fruit attached to the outside of the coffee beans to naturally fall off, leaving behind what we see as raw coffee beans.

Yirgacheffe processed in this manner exhibits a very primitive and wild red wine aroma after roasting. During the drying process, excess moisture in the coffee beans evaporates with the air, but the sugar substances within the coffee are well preserved. Therefore, coffee beans that have undergone high-temperature drying and fermentation present red wine aroma and similar mouthfeel.

However, it's worth mentioning that although the coffee obtained this way has an intense and captivating flavor, it also has drawbacks. Because the primitive processing method is accompanied by many impurities such as stones and branches, such Yirgacheffe cannot become the highest-grade product among Yirgacheffe coffees.
