"Tarrazu" in the southern part of San José, the capital of Costa Rica, derives its name from the ancient Huetar indigenous people who once settled here. Among these areas, the Canet Estate primarily grows passion fruit, with coffee planted only in a specific region. The coffee grown in this particular region is known to be exclusively distributed by Taiwan's Black Gold (green bean trader). Canet Estate gained rapid fame for its highly acclaimed "Musician" series green beans (Bach/Mozart/Chopin/Beethoven). According to Black Gold Coffee's official website, Canet Estate is located in the highest altitude coffee growing area of Costa Rica's Tarrazu region (1950m+).

Canet is situated in the highest altitude coffee growing area of Tarrazu, Costa Rica. Caturra is a single-gene variant of Bourbon, discovered in Brazil in 1937. It offers better production capacity and disease resistance than Bourbon, with shorter plant height that facilitates harvesting. In terms of flavor, it presents lemon or citrus acidity with fruity sweetness.

This region is Costa Rica's most intensive fruit cultivation area. The estate owner primarily grows passion fruit, with coffee production being quite scarce. Coffee is planted only in one specific area, receiving special care with selective harvesting of only ripe red cherry fruits.

Raisin honey processing is considered a form of double-fermented honey processing. Coffee cherries are first dried to a raisin-like state before depulping and undergoing honey processing fermentation. This method results in more intense fermentation flavors and preserves more mucilage than other honey processing methods. The 100% mucilage honey processing truly delivers distinctive raisin flavors. This is an exceptionally sweet processing method that offers white wine mouthfeel and balanced acidity, with more intense fermentation notes and higher mucilage preservation compared to other honey processing techniques.
