Las Lajas is located in the Central Valley region at the foothills of the Poas de Alajuela volcano and has been in operation for over 80 years. It is currently managed by the third-generation owner Francisca Cubillo and her husband Oscar Chacon. Francisca began researching and improving the flavor expression of coffee in the estate many years ago. In addition to using a Brix meter to screen standard red cherries during harvesting, she also has unique insights into processing methods.
Traditional Costa Rican farmers control the amount of pulp retained through the depulper at the washing station, then determine yellow honey, red honey, or black honey processing results based on the retained pulp amount. However, Francisca differs by retaining 100% of the highest proportion of pulp after depulping, instead controlling different flavor expressions by adjusting the drying time and frequency of turning the beans on African raised beds.
Due to the careful management of three generations of the Las Lajas family, they have invested in and improved many equipment and facilities to better process coffee beans. However, not every farmer has such capability and resources, so Francisca also helps surrounding farmers with berry processing and marketing. Berries from surrounding farmers that are processed by Las Lajas and meet their highest standards are called "Alma Negra."
