Panama is a small country at the heart of the Americas, its shores washed by both the Atlantic and the Pacific. It sits at 9 degrees north latitude, where the central mountain range converges and where Barú Volcano — one of Central America's highest peaks — rises over the landscape.

Barú stands more than 11,400 feet tall, and the land around it is rich in nutrient-dense soil. Together they create ideal conditions for the unique coffees Panama grows.

These highlands offer the microclimate, soil, temperature and altitude that a whole range of distinctive varieties need to be planted, grown and harvested. The cups tend to show jasmine, citrus, ripe fruit, berries, caramel, a particular kind of sweetness, vanilla and chocolate.

Panama Butterfly comes from the same growing area as Hacienda La Esmeralda. As Geisha prices climbed, the Geisha share in Butterfly was cut back to 40% to keep the lot commercially viable. Yes — Butterfly is 40% Geisha, with the rest made up of Caturra and Catuai. It is not a single variety at all, but a blend of three beans. All three grow in the Boquete region around Barú Volcano at altitudes above 1,600 meters, where the unusual microclimate and the fertile volcanic ash give the coffee its distinctive quality.

So this is a coffee that contains the Geisha variety. Geisha is one of the original coffee trees; some render the name one way, others another, but the word itself carries gentleness and floral fragrance. It is a coffee you do not forget once you have tasted it, and it regularly wins bidding competitions and cupping contests around the world with extremely high scores. A good Geisha shows intense floral and citrus aromatics, bright yet gentle acidity, a smooth, light mouthfeel and a remarkably delicate finish.
