Some excellent coffee farms or cooperatives with small production areas and limited cultivation are continuously improving their cultivation and processing methods for specialty coffee varieties. This allows Colombian coffee to have a more distinctive personality while maintaining a delicate texture, rounded acidity, and a sweet aftertaste. Some rare varieties with special processing will leave you even more unforgettable.
This batch introduces the Pink Bourbon from the Huila region. Pink Bourbon is first and foremost a bean that tastes "not quite Colombian." Why do we say this? Because its flavor profile resembles Kenyan coffee, with bright acidity of red fruits.
Pink Bourbon is a hybrid of Red Bourbon and Yellow Bourbon. The success rate of hybridization is relatively low, making Pink Bourbon quite rare. It has strong disease resistance. Among them, Yellow Bourbon and Red Bourbon coffee varieties have relatively stable reproduction, while the new variety Pink Bourbon, resulting from their hybridization, is difficult to produce stably. Due to the challenges in cultivation, the estate owners handle the processing with extra care. Both washing and drying are conducted on rooftops, and freshly harvested fruits are processed immediately, ensuring that the washed coffee presents high flavor clarity.
